- 1 tablespoon tomato paste
- 1 cup vegetable or chicken broth
- 1–2 tablespoons butter or olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 cup milk, half-and-half, or dairy-free milk
- Optional add-ins: sautéed onion, garlic, basil, oregano
Instructions
- Warm the butter or olive oil in a medium pot over medium-low heat.
- Add onions or garlic if using and cook until soft.
- Stir in crushed tomatoes and tomato paste.
- Pour in the broth, add sugar, salt, and pepper, and let the soup simmer for 8–10 minutes.
- Blend the soup for a smoother texture if desired.
- Stir in milk or cream at the end and adjust seasoning.
- Serve warm.
Notes
For a lighter version, use broth instead of milk to thin the soup. For a creamier finish, use half-and-half or coconut milk. Add cooked pasta, white beans, or spinach to make it heartier.
